Today is our first preseason home game! I whipped up this quick and easy meal to have before hand, containing refreshing raw veggies and a dressing that makes it all taste so much better.
- Brown rice, red leaf lettuce, grated carrots & beets, cucumber, avocado, pomegranate, tomato, chia seeds, hemp seeds, sunflower seeds
I put together what I had in my fridge, beans/chick peas and even tofu would be a great addition too!
- 2 tbsp tahini, 1 tbsp lemon juice, 1 tbsp honey, ½ tbsp soy sauce, salt and pepper, add water to thin
Mix ingredients in a bowl with dressing and voila! This should give me that energy I’ll need on court!
